My god, that would be a delightful problem i have never known anyone to have. I spent 20+ years as a real estate broker and it was always an issue of undersized.
I’m guessing. When a unit is oversized it runs for too short of a time. This means the humidity that needs to be removed from your home doesn’t get removed because the ac doesn’t run long enough.

No. It provides less relief than a properly (or slightly undersized). Oversized units do not deal with excess moisture well. Humidity will make a person feel hotter than moderately elevated temperatures.

It should run a lot - more than half the day. People don't like that but it's the correct way to have optimal dehumidification.

Any chance the AC lines are passing through the wall above the door. It’s hard to condense this much water unless the wood is extra cold.
Condensation occurs on a surface that is cooler than the ambient air. Assuming the humidity is high enough.

The solution is a dehumidifier. I had this issue when I moved into my current home. Noticeable on the old windows. Resealed the windows and got one fairly large dehumidifier for the whole house. Haven’t noticed any issue in a few years. I run it during the winter when humidity is an issue here.

Condensation. If you do not have a 'vent' in your bathroom it doesnt matter how long ago you showered, the moisture will just linger around and show up on surfaces like this.
Do you have a swamp cooler (evaporative cooling system) or an Air Conditioning system?

When that happened to me, it was the toilet above sweating (because air was hot, toilet water was cold, and I didn’t have the a/c on).
I might want to take a look and see if there's a pin hole in a pipe that runs over that door jam. I know it looks like condensation, but if you haven't been in the house, or used the shower since 6:30 am and I'm assuming you have A/C on or air flow? How high is the humidity in the house? Otherwise you might want to look for an alternative to condensation.
I get the same thing when my mother in law takes a shower and then opens the window with the fan running on the fan cover. She thinks there is water coming from the fan and it is because the fan is just pulling the air from outside to the fan and the fan is cold.

It's like Dairy Queen. Where hot and cold come together. Add an improper or incompatible base coat and top coat. Poof weird stuff happens...
You may be able to fix this problem by using a lower MERV rated a/c air filter. The high MERV filters that control allergens are restrictive and cause condensation. Try a filter with a MERV rating of 5 or less.
