To build on that, you could make armor stands and fill the walls with all the armors. One of each type, some with full trims, colors, enchantments, etc...

Line the walls with armour. Table in the centre and it is now a war room. No table and open the back, it’s a hallway.
Maybe also add some chests, and label them to store hold weapons and potions.

Probably going with this one because im playin with a datapack for more achievements and it also gives me some trophys (vanilla block with enchantment effect and a cool name) so yeah that would work perfectly with this trophys

Kiln room! Fill it with clay as decoration, furnaces, and pots. Put chests dedicated to sherds and clay inside, it can possibly give you more of a reason to use a feature you'd never use otherwise
A museum where you could display important items such as the enderdragon egg and/or personal important items such as your first diamond or first set of gear (suggesting you've kept them)
Typically I build these types of houses on top of ugly automation farms. Or you can use it as an enchanting room
Shelter (or prison 😈) for nitwits
Weapons depot. Stacks of tnt, armor stands, banners of weapons with piles of double stacked barrels. one side is target boxes with a wall of straw behind them. armored horse.
Smelting/copper farm. Basalt pools of lava. Copper block lowered on a chain. A redstone basalt farm could fit in here. Copper blocks waiting to be refined, stacks of finished copper items. doors, lightning rods etc. Blocks of beeswax.
Mini bastion A pile of gold in the middle with lava floor and a skinny stone pathway. Lava wall.
Or a storage house.
Villager slav- err trading hall
Stick a portal in the centre. Have happy ghasts on either side blocked off by fence gates, (so u can ride em later) and maybe add some netherrack around the portal. Make it look like a ruined one spawned in the middle of the house.
for the walls, add blocks under them so the floor doesn’t look incomplete
and you can use the area as a mass hub of trade

Could make it look like a house on the outside but you build a portal inside and make it look like the nether had spread throughout the house. I like making unnecessary things for buildings
Replace the floor with grass and some of the walls with glass and make it a bee-house.
Honestly it could be a really cool Barracks/Enchanting room!! Have glowing item frames with different weapons and armor stand for armor.

Looks like a good spot for all things furnace-y.
In my worlds I’ve noticed I almost always end up with an eight-furnace array. (I’m not quite sure why it’s always eight, but it probably just has something to do with the 8x8=64 thing and stacks of 64 in Minecraft. I dunno.) I put them side by side in a straight line with hoppers underneath pointing the same direction down the line to the same chest. I also have a hopper pointed into the top of each furnace and a chest on top of each of those hoppers so I can load items to smelt. Then another hopper pointed into the back of each to load up fuel. I usually don’t bother putting a chest on top of that one. Ok, ok, so you know how furnaces work.
Near that furnace array, I always also have a setup of eight (or sometimes a couple rows of eight) cauldrons with lava and drip stone set up to generate more lava.
With these two setups, I slowly end up with all the furnaces loaded up with six (one in the furnace and five in the hopper) lava buckets ready to smelt stuff. Then, whenever I have a multiples of 100 items to smelt (stone, ore, etc) I can put 100 items in one of the furnace’s chests. If I have a ton, I can just repeat across the array as much as I need to.
Your building seems like a perfect place for this setup.

Crafting hall, set up armor stands with various pieces of extra gear you've found from your adventures, anvil, crafting table, you could definitely make a forge area on one of the side walls. I'd put in various tables and cabinet areas through out, don't just have everything up against the wall. Lots of prospect here.
