That's one part, the other part is that it narrows the point of impact. With a "normal" fist, he hits the opponent with a lot more area - the entire front of the fist, not just the knuckles. But if you hit the same power on just a single small point, the kinetic energy is all focused on that one point and does a lot more damage. Distributing the energy over a large area means each point of that area gets only a small bit of energy. It's the same trick how some people can lie down on a bed of nails - their body weight is evenly distributed between all those nails. But let them try to lay on one single nail, and it'll pierce them, no matter what they do.
Just like a snake strike, Luffy's Snakeman needs speed and precision to inflict maximum damage when it hits. It's a cool detail.
The reason we don't do this irl is because it also pushes that force into the smaller area that you hit with. So to prevent damage, you'll usually punch less hard, and the force you can use without breaking it if you trained it is still much less than a regular punch.

I think some UFC fighters use leopard fist for body blows during grapples and jabs to the neck. It will basically crush your windpipe.

That is a legitimate punch in real life, the panther fist, it is generally used for striking called soft sensitive places(throat, stomach targeting organs, eyes). Not only does it hurt alot its size and shape can help it slip in tight areas. Main downside you have to lock your fingers in place because you can mess your hand up if it lands wrong, thankfully Luffy has armorment haki and doesn't have to worry about obliterating his fingers.

They are knuckles; just not his third (fist) knuckles.
In the Chinese 5 animal traditions (think King Fu Panda), this is indicative of the Leopard style (think movie 1's first villain, who was a fallen disciple of the character Sifu).
By using the 2nd knuckles, you can more precisely hit smaller, but more vulnerable/ vital targets like those on the neck.
There may or may not be some more precise connection to it being associated with snake-like hits in Japanese systems, but I don't know.

If you deliver the same amount of force in a smaller surface area, you apply greater pressure in that area.
This is why just pushing against someone won't hurt them, but pushing against them while pointing a knife at them results in a stab wound.
Some martial art styles take that same principle and apply it in a less extreme way to try to make their strikes deal more damage in a smaller area (as opposed to an entire fist), so they train by strengthening their finger bones to be able to handle carrying that force without injury (something knuckles and regular fists are normally better at handling).
Luffy's essentially doing the same, but without that last part since covering his hand in Haki + being rubber means he doesn't really have to worry about bone fractures as much.

- His hand shape when doing the knuckle attack will fly slower than finger attack, which is arrow shape.
- Small hit area and can change the direction easier. Luffy need the attack to go fast, hit the weak point only, not need big impact form the punch-knuckle attack.
- Hit deeper than normal, eaier to pass the strong defend enemy. It work like a nail, if the contact surfer is too big, it not gonna go too deep but small one make it goes deeper and deal more damage.
- Have a snake shape, better for looking, lol.

In a way it's his punching a ship garp-like training to get stronger each time he fights especially if the enemy is a stronger Haki user than him. Pain is Luffys trigger to grow stronger

It extends his reach very slightly but this increases the speed at which the tips of the knuckles accelerate because he moves his arm by expanding it so the fingers probably extend at least four gomu-gomus more than his reach would have expanded with just the knuckles meaning that the punch moves that much faster. Each strike does less damage but he can deal more strikes in the same amount of time.
