Why?
Basically it is our brain thinking while we are sleeping, remembering past events and experiences and what is it going through right now. That's why dreams can help out a lot since we usually don't hear our subconscious mind during the day as we are busy with something and once everything calms down our brain gets to focus on what we've been through. It also uses dreams to remember things easier as well
So there are multiple answers to this question depending on what overall idea you have about psychology. I'll put a TLDR at the end if you can't be bothered to read all of this but it will have to be multiple replies cause of word limits. I'll only go over psychodynamic (think Freud, red sofa and movie therapists) and biological explanations since they are the two most developed.
The Freudian/psychodynamic belief would suggest that dreams are manifestations of unconscious desires and conflicts, basically it is your unconscious revealing your true beliefs and wants. This is why movie therapists (most of Freud's ideas have been abandoned so they mostly appear in movies with a big red sofa but some therapists might) ask about peoples dreams based on the belief that dreams give indications of the unconscious with the unconscious being the cause of psychological issues.
A biological/biopsychological/neuropsychological (whatever you want to call it) explanation is far more vague and confusing because when basing psychological theories on biology it needs observable evidence (brain scans, neurotransmitter concentrations, hormone tracking etc.) and you can't measure dreams just measure stuff we think is associated with dreaming like sleep stages measured through the patterns of brain waves. The research is way too complex to try and explain or understand unless you are a specialist in the field (which I am not) but my basic understanding is that some say it is just the brain interpreting random signals that happen while you are sleeping, there is some indication that it is related to the recall of events so a dream is a skewed recall of a real life event or that they are mechanisms to improve the processing of information gained in the day.
TLDR: no one really agrees but it is either your unconscious presenting your own beliefs and conflicts (mostly discredited) or some form of brain signals turning into experienced events either randomly or to help process information.

We actually do know why we dream, but it's a relatively recent discovery. I can give you a summary of the best explanation according to the most up-to-date scientific literature.
Basically, dreaming is a fundamental part of how animals learn from their environment.
In REM sleep, this is where we are dreaming. In deep sleep, this is where memories from the day are consolidated from the hippocampus into the neocortex.
When we are dreaming, the brain is running its own internal model of the world. It's basically a simulation, where the brain can collect statistical information (i.e. probabilities of various neural states and sequences) about hypothetical scenarios one might encounter in real life, under its current model predictions.
The brain also collects this same statistical information about neural states while it is operating during the day, and it uses the difference between these two to update the brain's internal model to be able to more accurately predict the real world.

In case anyone is interested in knowing, the general understanding so far is basically that if a family or tribe or whatnot is under stress, likely from a lack of resources (we know stress during pregnancy can increase the likelihood of the kid being gay, such as having lots of sons, which could suggest a lack of resources as well) the family needs to control the amount of children they have. Instead of every single aunt and uncle in the family bringing home a partner and having kids, some will remain childless and provide for their nieces and nephews to give them a better chance at reaching adulthood, thus, their genes are carried on through the family as a whole. It's thought that this is a random little change in the womb to meet the mother's needs (similar to how a queen determines the roles of the ants in its colony), which was evolutionary beneficial for the family as a unit.
